Fairbanks restaurant offers food of the North

Fairbanks, Alaska (AP) May 2011

A Fairbanks woman has opened a restaurant with food with an Alaska flavor.

The Fairbanks Daily News-Miner reports Kathryn Wuitschick’s Loose Moose Cafe offers a menu based on meat raised in the North.

The restaurant features bison from near Delta Junction and reindeer from Nunivak Island. She imports caribou imported from Canada.

Her husband, Doug Drum, provides products from Indian Valley Meats, a business he’s owned for more than 30 years south of Anchorage.

She says a signature dish is a burger made of ground beef, pork and buffalo.

She says any tourist trade she captures will be a bonus but she’s targeting residents.
